Chicken Shish Kabobs

Summer screams chicken shish kabobs. In the summer my mom would make it with wild rice and we would sit on the patio with a fire and think about how great life and no school was.
This recipe is so basic, it’s built for anyone who loves deliciously grilled meals and long summer days.

Add chicken, bell peppers, red onion, pineapple, paprika, salt and canola oil to a large bowl and toss together.
Skewer the contents onto the wooden skewers, food should be touching but not smashed together.
Heat a grill or grill pan to hot and preheat oven to 400 degrees.
When the grill pan is hot cook for 3 minutes a side on all sides, and then place onto a sheet pan and bake in the oven for 15 minutes or until chicken has cooked through.
Ingredients
2 chicken breasts, cut into cubes
1 red bell pepper cut to 1” pieces
1 green bell pepper cut to 1” pieces
1 small red onion cut to 1” pieces
1 small container fresh pineapple chunks
1 teaspoon paprika
¼ teaspoon salt
¼ cup canola oil
Wooden skewers, soaked in water for an hour
