Ground Beef and Sweet Potato Bowl with Hot Honey

This is my take on the viral Ground Beef and Sweet Potato Bowl video. It is packed with flavor and instead of adding cottage cheese I swapped in Pepitas.   This bowl has an intense amount of flavors, and to make it work for everyone you might need to separate all the ingredients and allow your family to mix in at their comfort level.

*You can swap brown rice, quinoa or farro for sweet potatoes. All offer a slightly different take that would be delicious.

Directions

  1. Preheat the oven to 400 degrees F.
  2. Toss the potatoes with oil, salt, and cumin.
  3. Spread on a sheet tray and roast for 30 minutes or until the potatoes are cooked through.
  4. Remove and set aside.
  5. In a large sauté pan add ½ cup of water and bring to a boil.
  6. Add the ground beef to the pan, turn down to medium low, and continue to break the meat apart until it’s fully cooked.
  7. Add the cumin, paprika, garlic powder, salt, and black pepper.
  8. Cook until meat is soft and tender.
  9. Set aside.
  10. In a large bowl add the ground taco meat, add sweet potatoes, avocado cubes to a dish.
  11. Squeeze lime over the avocado and season it with salt.
  12. Top the bowl with lettuce, pepitas and drizzle with hot honey.
  13. Serve.

  • 2 sweet potatoes, small diced
  • 2 tablespoons vegetable oil
  • 1 teaspoon kosher salt
  • ½ teaspoon cumin

 

  • 1-pound 85/15 ground beef
  • ¾ cup water
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

 

  • 1 avocado, cubed
  • ½ teaspoon salt
  • 1 lime juiced

 

  • Pepitas
  • 1 cup iceberg lettuce shredded
  • *1 tablespoon hot honey
