Kale & Pear Salad with Roasted Chickpeas

This kale, pear, and roasted chickpea salad is light, crisp, and full of texture, perfect alongside a warm bowl of soup or on its own. The roasted chickpeas add a satisfying crunch with a savory salty bite that balances the sweetness of the pear.

Massaged kale softens while still holding its structure, making each bite feel hearty and fresh. Finished with a simple, bright lemon, garlic and thyme dressing. This is a great option when you want something that feels wholesome without being heavy.

Directions

  1. Preheat the oven to 375 degrees.
  2. Line a sheet tray with parchment paper.
  3. Spray with nonstick spray.
  4. Add chickpeas to a bowl and toss them with oil and salt.
  5. Place chickpeas on a sheet tray and roast for 20 minutes or until crispy. 
  6. In a mixing bowl add lemon juice, thyme leaves, garlic, oil and sour cream, mix.
  7. Season the dressing with salt and pepper.
  8. In a large bowl add kale and top with chickpeas, pears and shaved parmesan cheese.
  9. Dress with salad dressing.

½ cup chickpeas, drained and dried

1 tablespoon oil

¼ teaspoon kosher salt

1 red Anjou pear, peeled and sliced

1 green Anjou pear, peeled and sliced

1 clove garlic, minced

¼ teaspoon fresh thyme leaves

¼ cup olive oil

½ cup sour cream

¼ cup fresh shaved parmesan cheese
