Kale & Pear Salad with Roasted Chickpeas

This kale, pear, and roasted chickpea salad is light, crisp, and full of texture, perfect alongside a warm bowl of soup or on its own. The roasted chickpeas add a satisfying crunch with a savory salty bite that balances the sweetness of the pear.

Directions
- Preheat the oven to 375 degrees.
- Line a sheet tray with parchment paper.
- Spray with nonstick spray.
- Add chickpeas to a bowl and toss them with oil and salt.
- Place chickpeas on a sheet tray and roast for 20 minutes or until crispy.
- In a mixing bowl add lemon juice, thyme leaves, garlic, oil and sour cream, mix.
- Season the dressing with salt and pepper.
- In a large bowl add kale and top with chickpeas, pears and shaved parmesan cheese.
- Dress with salad dressing.
