Cobb Salad

A Cobb salad is often thought of as a classic adult salad, but it really deserves a place at the kids’ table too. It can be tossed together or served with each ingredient separated, which makes it approachable for different preferences. It is especially delicious when paired with my homemade buttermilk ranch dressing (recipe below), and my secret ingredient-dill. Let me know if you like the dill?

Directions

Plate the lettuce on 2 large plates.

Take each of the ingredients and lay them in a wedge on the lettuce on each plate.

Top with dill, salt and pepper.

Serve with homemade ranch*.

Ranch Dressing Makes 1 cup: ½ cup mayo, ½ cup sour cream, 1/3 cup buttermilk, 1/4 teaspoon garlic powder, 2 teaspoon fresh or  dried parsley, ½ teaspoon fresh or dried dill, 2 drops of Tabasco, 1 teaspoon fresh chopped chives, ½ lemon juiced, ¼ teaspoon salt and cracked pepper. Mix. Serve.

2 chicken breasts grilled*, and cut into 1-2” dice

1 ripe Haas avocado, diced

2 tomatoes, quartered

2 eggs, hardboiled, peeled and quartered

½ cup blue cheese, crumbles

4 bacon strips, cooked and crumbled

1 tablespoon fresh dill leaves, rough chopped

2 heads of baby gem lettuce, roughly chopped

½ cup ranch dressing
